Why Buffalo Milk is Perfect for Processing
Murrah buffalo milk naturally has 7-9% fat and around 9-10% SNF (Solids-Not-Fat). This unique composition makes it superior for solid dairy products compared to cow milk.
High-Margin Products
- Ghee (Clarified Butter): Buffalo milk yields dense, granular, white ghee that commands premium prices in the market. Since ghee has a long shelf life, it protects farmers from milk spoilage during supply chain disruptions.
- Paneer (Cottage Cheese): The high protein and fat content results in a much higher yield of soft, spongy paneer (approx. 200g of paneer from 1 liter of milk).
- Mozzarella: The defining stretch and texture of true Mozzarella require buffalo milk. Urban artisanal pizzerias are heavily sourcing original buffalo mozzarella.
- Khoa/Mawa: Used in traditional Indian sweets, the thick consistency of buffalo milk boils down excellently for high-yield Khoa.
